Epic Food - Scrambled tofu

Welcome back to 'Epic Food'. This week I would like to introduce you to one of my favourite dishes – scrambled tofu. It is a quick and easy meal, can be eaten for breakfast lunch or dinner and varied with little to no effort.

If you live on a plant-based diet, I am sure you were introduced to scrambled tofu early on in your life as a herbivore. For those of you who haven't had the pleasure – you are welcome in advance.

Scrambled tofu can be seen as the plant-based version of scrambled eggs. You can keep it super simple and more traditional and just have the tofu with some spinach and spices. For a more fulfilling meal add loads of veggies, put it in a wrap and add some salsa and guacamole. The variations are endless.

Eating healthy really doesn't have to be difficult. Scrambled tofu can be made in under 30 minutes and you can pretty much throw in whatever you have in the fridge and add whatever spices you like.

Introducing new foods into your life can reignite your passion for cooking and this is one that I would highly recommend. Jump in the kitchen and give this one a go!


Scrambled Tofu
200g firm tofu
1 onion
1 large carrot
1 small zucchini
1/3 capsicum
1 large tomato
1/2 cup of spinach

Spices – to taste
salt
pepper
turmeric
cayenne pepper
oregano

Optional
Serve with avocado or guacamole, a slice of bread or in a wrap with ketchup or salsa.
